It's a LIVE cooking demonstration so easy you can COOK along with us. This is a traditional Cajun side dish or can be used as a bed to serve entrees on. Grab the ingredients listed below and join in on the fun! Don’t cook, no problem. Grab your favorite drink and come enjoy the laughs and learn about Cajun cooking!

TOPIC: Cajun Basics - The Trinity, Making Cajun Maque Choux
Cajun Maque Choux
Ingredients:
1 ½ cups lima beans (12 oz frozen)
1 ½ cups corn (12 oz frozen)
1 onion
1 bell pepper (any color, we use red)
1 rib celery
2 cloves garlic
2 Tbl Olive oil
2 tsp Cajun Seasoning
1 tsp salt
Broth from lima beans
For this demo, we are using frozen lima beans and frozen corn. Lima beans need to be pre-cooked and drained, reserve cooking broth for use in the recipe. Cook lima beans to al dente (about 15 minutes). The lima beans will finish cooking in the skillet. Also have the corn defrosted.
Steps we will do together:
Dice onion, bell pepper and celery.
Chop garlic.
Heat olive oil to medium high in a deep skillet or dutch oven.
Saute vegetables until tender (approximately 15 minutes).
Add corn, cajun seasoning and salt (if necessary), mixing well.
Bring corn up to heat.
Add lima beans. Mix well. Bring up to heat.
Add approximately 2 ounces of bean broth so the mixture is not dry.
Turn heat down to medium and cook. Add broth as necessary for consistency.
If not seasoned enough add cayenne pepper.
