We use large head on shrimp. If you cannot find head on shrimp, headless will work – do not peel the shrimp. Use a pan with a large bottom area; we are using a cast iron Dutch oven.

2 lbs shrimp, heads on & unpeeled. 14 count/per pound
1 Tbl Olive oil
Cajun Trinity – diced (*)
* 2 med onions
* 1 lg green bell pepper
* 2 ribs celery
5 med cloves garlic, chopped
½ cup Worcestershire sauce
½ cup lemon juice (fresh)
Pinch cayenne pepper
2 tsp cracked black pepper
2 tsp Cajun or Creole seasoning
3 sticks cold butter, cut into tbl size pieces (we used salted)
Salt
Green Onions
French Bread
