We found glass cutting boards that have feet high enough we can put them over our stove or sink. This allows us the extra counter space we need when prepping cold foods, using our crockpot, or making coffee. Especially since the outlet is above the sink. We also found a magnetic towel bar, which fits perfectly on the side of our vent/light. We move it when using the stove, just to make sure we don't catch anything on fire. 3M hooks everywhere too.
Bins under the bench seats make transporting food and other necessities back and forth from home much easier.
The little closet had a rod for hanging shirts, but even my 8 yr old daughters shirts were too tall. We removed the rod, and replaced it with slide-out drawers found on Amazon. A lot of measuring to find the right size, and we ended up with 2 different sets stacked for a perfect fit.
For our sidhware, we used rubberized shelf liner to help keep things from sliding around. Then we found one of the little wire shelves typically used for storing pots and pans. We put large plates on the bottom, small plates in the middle, and bowls on top. All the cups go to the side.
Our bed has a space a the foot of it, and we found the we just collected piles of stuff there. I found one of the plastic drawer sets at Wal-Mart, and it fits perfectly. We keep the mini-vac right next to it for easy storage. We also found hooks to hang the broom and dustpan on the wall right by the door. Super handy!
The door to the bathroom is pretty skinny, but we found this over-door hanging basket setup. Pocket knives, flashlights, rocks the kids collect, toys... Whatever you need it for. The black strap on the side is for hanging hats. There are clips from top to bottom, allowing plenty of space for everyone. We also found an upright fan for those days when we don't really need air con, just a little air flow. Fits perfect in the corner, and is quiet enough to leave running while we sleep.
We put adjustable towel bars in the shower. Easy to remove when using the shower, and replace once everyone is done. We can hang the extra towels there to dry, or swimsuits to drip dry. Hard to see in the photo, but we don't have a place for toilet paper, so we found a standing toilet paper rack. It hold 2-3 rolls on the bottom, one on the rod, and has a little shelf above the rod too. (The photo has a washcloth on it.)

I did some open fabric baskets from Walmart, and some bins with lids too. I had a hard time finding the right size. As they say, measure twice, cut once, or in this case fit perfect.

Really like the idea of the glass cutting boards for over the stove or sink! I Where did you find the glass cutting boards with the taller feet? I like the wire rack shelves for the cupboard with the rod which we agree is totally useless. Great ideas!

Thanks for all the great ideas. I'm sure a lot of folks are aware, but Campco (and probably others) make a folding metal cover that goes over the stove burners, and can be easily folded out of the way when you want to use the burners.

Look for specific ideas that would help you with that. We've only had our camper for a little over a year. Each trip we find something and add it. less
